Ingredients
- 1 kg peas pods for about 400 g net peas
- 2 or 3 small white onions
- 2 cloves of black garlic
- 2 beautiful branches of sweet basil
- Bouteillan Mira Luna extra virgin olive oil
- Fleur de sel and pepper (mill)
- For decoration: pink garlic flowers

Preparation

Step #1
Shell and rinse the peas.
Step #2
Blanch the peas by passing them 1 minute (3 minutes if you want them rather tender than crunchy) in a saucepan of simmering water, then cool them with cold water. Set the peas aside in the colander.
Step #3
Chisel the basil leaves (keeping a few whole leaves for decoration). Mash them in mortar with the black garlic cloves cut into pieces in 4 tablespoons of Bouteillan olive oil.
Step #4
Finely cut the small white onions. In a bowl, mix the peas with the onions and olive oil flavored with garlic and basil.
Step #5
Add salt, pepper and drizzle with Bouteillan olive oil.

Step #6
Decorate with some basil leaves and some pink garlic flowers.
